Chicken Lettuce Rolls



Hello there, i haven't written here in a while...But i'm back.


This easy recipe is perfect for lunch at the office... or a quick and light dinner.

Ingredients: 
- Chicken Breast 
- 2 Carrot or 5 Baby Carrots ( if you find them ) 
- 1 Onion
- 1 Garlic
- Lettuce ( If it's hydrophobic, better)  
- Salt
- Pepper
- Coconut Oil

 First we are going to cook the chicken,We need to add water in a medium pan with the chicken breast, the garlic, and the half of the onion. Let it boil for 15/20 min. When this is ready take the chicken out of the water, and put it in a plate, we need to let cool down for a while.

In the same pan with the same water add the carrot (finely chopped) for 10 min. Meanwhile we start chopping the chicken breast and onions, we can do it in squares, or strips or shredded -whatever you like better.

Ready? Now we have to warm a pan with a little bit of coconut oil, add the onion, the carrots, and for last but not least the chicken breast. Add salt and pepper to taste, you can add some curry if you like.

Take the mix of chicken and vegetables out of the fire, and start cleaning or lettuce carefully. Then you just serve the chicken in the middle of the plate, and put the lettuce in the sides.

When you are ready to eat, you fill the lettuce with the chicken stuffing and roll it...
